The History of Recipes
We can read the history of meal recipes back into antiquity, in fact as far as ancient Egypt, and potentially, even further back. Having said that, mostly, these ancient recipes were just very simple hieroglyphic recipes for food preparation.
In fact, the most ancient recipe in existence, according to experts in ancient history is a series of clay tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful. Progressing into The time of the roman empire 25BC a roman called Apicius wrote a few documents showing how to cook the recipes prepared by the Romans. In his scrolls, he describes how the meals were separated into hors d`oeuvre, main course and desserts, a very modern way of dining. Additionally, he tells us how the ancient cooks used a wide range of spices, including a few that are still present in modern kitchens for example thyme, mint and parsley. For the centuries that followed, the powerful and wealthy strove to lay on the most exotic banquets, and as a consequence, chefs and their recipes could command a high salary. However, it wasn`t until the nineteenth century that fine cooking and cookery books became really popular. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to assembling, testing, and recording the recipes of their peers. By the time we get to the 20th century, cook books were starting to become popular mostly due to more people being able to read, leisure time and a general increase in wealth. |
