The History of Recipes
We can read the history of written recipes way back into the far past, in fact as far back into recorded history as the Egypt of the Pharoahs, and maybe even further. However, in the main part, these ancient recipes were just primitive hieroglyphic or cunieform recipes for food preparation.
In fact, the most ancient recipe in existence, according to food historians are some tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. Later on, in Roman times around 25BC a roman called Apicius assembled a collection of documents showing how to cook the recipes enjoyed by wealthy Romans. In his publication, he tells us how the meals were split into starters, main meal and afters, something that is very familiar to us today. Aspicius also recounts how the cooks of his times used a good variety of herbs and spices, including some familiar names for example thyme, rue and parsley. Later on in the 1400s, knights returning from the crusades brought back a variety of foods and spices from Arab cooking, including spices such as coriander, parsley, and basil. These new herbs and spices led to an explosion in manuscripts on cooking, some of which still exist in private libraries. By the advent of the twentieth century, cooking books are greatly in demand as a result of more people being able to read, increased leisure time and having more money to spend. The introduction of the TV brings us TV chefs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, allowing everyone to access thousands of recipes such as those found on our web site. |
