The History of Recipes
It is quite feasible to follow the history of transcribed cooking instructions way back into history, in fact as far as the Egyptians, and possibly even further than that. Having said that, these, early cookbooks were just basic hieroglyphic instructions for food preparation.
Interestingly, the most ancient recipe in existence, according to historians is a collection of clay tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful. Moving on, there were a couple of books from the 14th Century ; one book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Don`t be fooled by the titles though, these two books are unconnected to the curry that is popular today, but instead accounts of the types of meals cooked for the rich and wealthy people of the period. Later, in the 15th century, knights returning from the crusades brought back many new foods, spices and herbs from Arab countries, such as basil and coriander. These new culinary innovations created an eruption in manuscripts on food, many of which are now in private libraries. During the next few hundred years, the upper-class families of the West strove to lay on the best banquets, and as a consequence, cooks and their recipe collections were greatly in demand. Notwithstanding that, it was during the 19th century that formal cookery and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, verifying, and publishing recipes common in their social group. By the time we get to the twentieth century, cookery publications were starting to become popular due to more people being able to read, more free time and having more money. Like it or not, the introduction of TV brings us celebrity TV chefs and the spin-off recipe books. And that brings us to the present day and the invention of the internet, permitting everyone to search through massive numbers of recipes just like those on this web site. |
