The History of Recipes
It is possible to track the history of `recipes` way back into ancient history, certainly as far back into recorded history as the ancient Egyptians, and maybe further still. However, these, ancient cookbooks were just simple hieroglyphic instructions for food preparation.
The truth of the matter is, the oldest recipe discovered so far, according to Professor Solomon Katz, is a collection of tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. As we move into Roman times 25BC a man called Apicius compiled a collection of scripts detailing recipes cooked by wealthy Romans. In his works, Apicius tells us how the meals of wealthy Romans were separated into appetizers, main course and afters, a very modern way of dining. Aspicius describes how the cooks of Roman times used a good variety of spices and herbs, including a few that are still present in modern kitchens like bay, rue and dill. During the next few centuries, the wealthy families of the West competed to serve up the most extravagent meals, and because of this chefs and their recipe collections were highly sought after. Nevertheless, it was during the nineteenth century that formal cookery and cookery books became really popular. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to collecting, testing, and recording recipes that were common in the better off homes of the day. By the advent of the 20th century, cooking books were in great demand, mostly as a result of higher levels of literacy, leisure time and being a little richer. |
