3 medium red onions, sliced thinly
3 medium yams, thinly sliced
2 cup apple cider
2 tsp brown sugar
1/2 tsp salt
1/4 tsp pepper
1 tbsp fresh thyme
1 tbsp olive oil
Directions
Preheat oven to 350F. Arrange the onion and yam slices in alternating
layers in a 9-inch round or oval gratin dish. Pour the apple cider
into a small saucepan, add the brown sugar, salt and pepper, and stir
over medium heat until the sugar dissolves. Pour the hot cider over
the onions and yams and sprinkle with thyme. Dot with Olive oil,
cover the dish with foil, and bake for 1 hour. Remove the foil and
continue baking, basting often, until the onions and yams are tender,
about 30 mins. Divide among plates and serve.

The History of Recipes

In the fifteenth century, people returning from the crusades brought back many new foods and herbs from Arab cooking, including spices such as basil and rosemary. The introduction of these new tastes created a surge in books on cooking, some of which are kept safe in private collections. Like it or not, the introduction of television gave us celebrity chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, allowing everybody to search through massive numbers of recipes just like those on our web site. |
