4 zucchini, medium
1 cup rice,long grain cooked
1 onion, yellow, chopped
1 garlic clove, chopped
1 egg, beaten
2 tbsp olive oil
1/2 lb ground beef, lean
1/2 cup bread crumbs
2 cup spaghetti sauce,canned *
3 tbsp dill, fresh, chopped
2 tbsp parsley, fresh, chopped
2 tbsp parmesan cheese, grated
Directions
* store bought if preferred. Preparation: 30 minutes Cooking: 45
minutes 350F Split zucchini lengthwise, scoop out seeds. Saute ground
beef, onion, garlic, dill, and parsley in olive oil. Remove from
heat. Add cooked rice, beaten egg, 1/4 c bread crumbs and mix well.
Fill zucchini with mixture and place in a baking dish. Cover with
spaghetti sauce, sprinkle cheese and remaining bread crumbs on top.
Cover and bake at 350 for approximately 45 minutes, until zucchini is

The History of Recipes
We can track the history of meal recipes way back into antiquity, in fact as far back as the ancient Egyptians, and possibly even further. Interesting though that maybe, these, early cook books were just simple hieroglyphic instructions for preparing meals.
In fact, the most ancient recipe discovered, according to food historians is a series of stone tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `exhilarated, wonderful and blissful`. Progressing into The time of the roman empire 25BC a roman called Apicius compiled a few scripts showing how to cook the recipes cooked by his fellow Romans. In his scrolls, Apicius tells us how the roman meals were split into hors d`oeuvres, entrees and desserts, a style of dining still practiced today. Aspicius also recounts how the cooks of Roman times were skilled in the use of a good variety of herbs and spices, including a few you will know like thyme, rue and parsley. Later on in the 1400s, people returning from the crusades brought us a variety of spices and herbs from the holy land, such as coriander, basil and rosemary. The introduction of these new herbs and spices caused an outbreak in recipe books, many of which are kept safe in private cookery archives. By the time we get to the 20th century, cookery publications are greatly in demand mostly due to better eduction, more free time and having more money to spend. The introduction of the TV brings us TV chefs and the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, allowing everybody to access massive numbers of recipes such as those found on our web site. |
