The History of Recipes
We are able to read the history of meal recipes way back into antiquity, at least as far back into history as ancient Egypt, and possibly even further than that. However, in the main part, these early recipes were just basic pictorial, hieroglyphic or cunieform recipes for preparing meals.
As we move into The time of the romans around 25BC a roman called Apicius compiled a few documents describing recipes prepared by the Romans. He describes how the meals of wealthy Romans were separated into appetizers, main meal and dessert, something that is very familiar to us today. He also recounts how the ancient Romans used a wide range of spices, including some that we all recognise for example bay, rue and parsley. During the next few centuries, the rich and powerful families of Europe competed with each other to offer the most exotic meals, and as a consequence, cooks and their collection of recipes could command a high salary. Nevertheless, it was during the 19th century that haute cuisine and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to assembling, testing, and writing down recipes common in their social group. The introduction of television gave us celebrity TV chefs and the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, allowing everybody to access massive numbers of recipes like those on sites such as the one you are reading now. |
