4 each chicken breasts (boned)
2 tbsp flour
2 tbsp olive oil
12 oz mushrooms, sliced
5 garlic cloves, crushed
1/2 cup balsamic vinegar
1/2 cup chicken broth
1 each bay leave
1/4 tsp thyme
1 tbsp flour (additional)
1 tbsp butter
1 salt and pepper to taste
Directions
Rinse chicken and pat dry. Dredge in mixture of salt, pepper and 2 T
flour. Brown chicken in oil in skillet on 1 side for 2 to 3 munutes.
Turn chicken. Add mushrooms and garlic. Cook for 3 to 5 minutes or
until chicken is brown. Stir in vinegar, broth, bay leaf and thyme.
Cook, covered, over medium heat for 10 minutes or until chicken is
tender.
Remove chicken to serving platter. Stir in 1 T flour and butter.
Cook for 7 minutes, stirring constantly. Discard bay leaf. Pour over
chicken. Serve with wild rice and vegtable.

The History of Recipes
We can follow the history of meal recipes far back into ancient history, certainly as far as ancient Egypt, and maybe even further. Interesting though that maybe, generally, these early cook books were just basic hieroglyphic recipes for food preparation.
Progressing into The time of the roman empire 25BC a roman called Apicius created a collection of documents detailing recipes prepared by wealthy Romans. In his publication, Apicius recounts how the meals were split into appetizers, main course and desserts, something we still use today. Aspicius also recounts how the cooks of Roman times used many aromatic flavors, including many that are still in use today such as basil, rue and dill. For the centuries that followed, the rich and powerful families of the West competed to lay on the most exotic meals, and because of this chefs and their recipe collections became highly prized. Even so, it was during the nineteenth century that fine cooking and recipe books became popular. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted their lives to collating, trying out, and recording recipes for their fellow cooks to enjoy. The introduction of the TV gave us TV cooks and the recipe books that accompanied them. Which pretty much brings us to the present day and the internet revolution, allowing everybody to access thousands of recipes like the ones you can find on sites such as this. |
