The History of Recipes
Written recipes as an idea can be observed way back into ancient history, certainly as far into history as pharonic Egypt, and maybe even further. However, generally, these early recipes were just very basic pictorial recipes for meal preparation.
In an interesting twist, the oldest recipe found, according to experts in ancient history is a collection of stone tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful. Much later, in Roman times a man called Apicius compiled some scripts describing recipes cooked by the Romans. In his publication, he recounts how the meals of wealthy Romans were split into hors d`oeuvres, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the ancient chefs were skilled in the use of a wide range of aromatic flavors, including many that are still in use today like basil, mint and asafoetida. Later on, in the 15th century, knights returning from the crusades brought us many foods and spices from the East, including spices such as coriander, basil and rosemary. These new foods and spices caused an outbreak in recipe publications, the majority of which are kept safe in academic collections. Over the succeeding few hundred years, the rich families of Europe competed with each other to lay on the most extravagent banquests, and as a result chefs and their recipes increased in prestige. Nevertheless, it wasn`t until the 1800s that haute cuisine and cookery books became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, trying out, and recording recipes that were common in the better off homes of the day. The TV revolution brought us cooking programs and the demand for the spin-off recipe books. Which brings us neatly up to date and the internet revolution, permitting us all to access massive numbers of recipes just like those on sites such as this. |
