The History of Recipes
Historians have tracked the existance of recipes way back into history, in truth as far back into recorded history as the Egyptians, and maybe even further. Interesting though that maybe, mostly, these early recipes were just very simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
In fact, the most ancient recipe in existence, according to academics are a few clay tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful. Progressing into Roman times around 25BC a roman called Apicius compiled a number of documents showing how to cook the recipes enjoyed by his fellow Romans. In his publication, he recounts how the meals were divided into hors d`oeuvres, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the cooks of Roman times used a good variety of herbs and spices, including many that are still in use today for example basil, mint and parsley. Later on, there were some books which appeared in the 1300s - a cookery book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Surprisingly, these books are not about the spicy food that is served today, but rather accounts of the types of meals prepared for the rich people of that period. Later on in the 1400s, people returning from the crusades brought us a variety of foods and herbs from Arab countries, including spices such as coriander, parsley, and basil. These new foods and spices caused a torrent in cookery books, the majority of which still exist in private cookery archives. By the advent of the twentieth century, cookery books were greatly in demand mostly as a result of more people being able to read, leisure time and having more disposable income. The introduction of the TV brings us TV chefs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, allowing everybody to search through thousands of recipes such as those found on our web site. |
