3/4 cup all-purpose flour
1 1/2 tsp baking powder
3/4 cup sugar
3/4 tsp ground cinnamon
1/2 cup egg substitute
3 tbsp water
1 tbsp vegetable oil
1 tsp vanilla extract
1 medium banana, mashed
1 powdered sugar
Directions
Place paper baking cups in muffin pan, and coat with vegetable cooking
spray. Combine flour and next 3 ingredients in a large bowl. Whisk
together egg substitute and next 3 ingredients. Stir in banana. Add
to dry ingredients, stirring just until moistened. Spoon into baking
cups, filling two-thirds full.
Bake at 350=B0 for 25 minutes or until a wooden pick inserted in
center comes out clean. Remove from pans immediately, and cool on a
wire rack. Dust with powdered sugar.

The History of Recipes
We are able to read the history of `recipes` far back into the far past, in fact as far back as ancient Egypt, and possibly even further than that. However, these, early recipes were just primitive pictorial recipes for food preparation.
The truth of the matter is, the most ancient recipe in existence, according to experts in ancient history is a collection of tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `exhilarated, wonderful and blissful`. As we move into The time of the romans around 25BC a roman called Apicius created a number of documents showing how to cook the recipes cooked by his fellow Romans. In his works, Apicius tells us how the meals were separated into starters, main course and dessert, something that is very familiar to us today. Aspicius also describes how the ancient chefs used many herbs, including a few that will be familiar to modern cooks like basil, fennel and asafoetida. Later, in the fifteenth century, people returning from the crusades brought us a variety of foods and herbs from Arab cooking, such as coriander, parsley, and basil. The introduction of these new foods and spices led to a torrent in publications on food, some of which still exist in private collections. During the next few centuries, the families of Europe strove to offer the most exotic meals, and as a consequence, cooks and their recipes increased in prestige. Nevertheless, it was during the nineteenth century that fine cookery and recipe publications really came of age. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collating, verifying, and publishing recipes to help cooks of their time. By the advent of the 20th century, cookbooks were greatly in demand mostly as a result of more people being able to read, people having more free time and a general increase in wealth. |
