The History of Recipes
Written cooking instructions as an idea can be observed far back into ancient history, certainly as far as the ancient Egyptians, and potentially, even further back. However, generally, these ancient records were just very basic hieroglyphic instructions for preparing meals.
In an interesting twist, the oldest recipe in existence, according to historians are a few stone tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `blissful`. Progressing into Roman times 25BC a roman called Apicius created a collection of documents detailing recipes prepared by wealthy Romans. In his publication, he recounts how the meals were divided into hors d`oeuvre, entrees and dessert, a style of dining still practiced today. He also informs us how the early Romans made use of many spices and herbs, including some that we all recognise such as bay, fennel and asafoetida. Later on, in the 15th century, people returning from the crusades brought us a variety of spices and herbs from Arab countries, including spices like coriander, basil and rosemary. These new foods and spices prompted a surge in manuscripts on food, many of which are kept safe in private cookery archives. The TV revolution gave us TV cooks and the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, permitting everybody to search through massive numbers of recipes like the ones you can find on this site. |
