The History of Recipes
We can trace the history of meal recipes back into distant history, certainly as far back into history as pharonic Egypt, and possibly even further. Having said that, these, old cookbooks were just very basic hieroglyphic recipes for preparing food.
In an interesting twist, the oldest recipe discovered, according to Professor Solomon Katz, are a few tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. During the time of the Romans a man called Apicius created a number of scripts detailing recipes prepared by the Romans. In his scrolls, he tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and dessert, something we still use today. Aspicius also describes how the ancient chefs were skilled in the use of a good variety of aromatic flavours, including a few that are still present in modern kitchens like thyme, rue and asafoetida. Later on, in the 15th century, knights returning from the crusades brought back a variety of foods and spices from the holy lands, including spices such as parsley and basil. The introduction of these new herbs and spices caused an explosion in recipe manuscripts, many of which are now in private cookery archives. Over the next few hundred years, the rich families of the West competed to lay on the most extravagent banquests, and consequentially chefs and their recipe collections were greatly in demand. Even so, it wasn`t until the 19th century that haute cuisine and recipe collections rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collecting, trying out, and recording recipes that were common in the better off homes of the day. When we get to the 20th century, cooking publications were highly popular as a result of better eduction, increased leisure time and being a little richer. The arrival of TV brings us TV cooks and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting us all to access massive numbers of recipes such as those found on our site. |
