The History of Recipes
We are able to follow the history of meal recipes far back into antiquity, certainly as far back as early Egypt, and quite possibly further than that. Having said that, mostly, these early recipes were just very simple hieroglyphic or cunieform instructions for preparing meals.
Later on, in The time of the roman empire around 25BC a roman called Apicius wrote some documents describing recipes cooked by wealthy roman citizens. In his scrolls, he tells us how the roman meals were split into appetizers, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he tells us how the ancient chefs were skilled in the use of a good variety of aromatic flavours, including a few that will be familiar to modern cooks like thyme, mint and asafoetida. Later, in the fifteenth century, people returning from the crusades brought back many foods and herbs from Arab cooking, including parsley and basil. The introduction of these new foods and spices created a surge in cookery books, the majority of which still exist in private collections. By the time we get to the 1900s, cook books are in high demand, mostly as a result of more people being able to read, people having increased free time and having more money to spend. |
