The History of Recipes
Academics have proved the existence of recipes way back into history, in truth as far as pharonic Egypt, and quite possibly further than that. Having said that, mostly, these early cook books were just simple hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the most ancient recipe discovered, according to Professor Solomon Katz, is a collection of stone tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. As we move into The time of the roman empire 25BC a roman called Apicius compiled a few documents which described recipes prepared by wealthy Romans. In his publication, he recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main course and desserts, something we still use today. Additionally, he tells us how the early Romans made use of a wide range of spices, including some that we all recognise such as thyme, mint and dill. As our culinary historical trip moves to more modern times there were two interesting cookery books which were published in the fourteenth century ; one book entitled `Forme of Cury`, and another entitled `Curye on Inglish`. Don`t be fooled by the titles though, these are not about the indian curry that is familiar to us all today, but instead recipes for the types of meals prepared for the nobility of that period. In the 15th century, people returning from the crusades brought us many new foods and herbs from the holy land, including spices like parsley and basil. The introduction of these new foods and spices caused an increase in books on cookery, most of which are kept safe in private collections. Over the next few centuries, the rich and powerful families of Europe tried to lay on the most extravagent meals, and consequentially the best chefs and their recipe collections were greatly in demand. Notwithstanding that, it wasn`t until the nineteenth century that fine cooking and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to assembling, testing, and writing down the recipes that were being prepared for the better households. By the arrival of the twentieth century, cookery publications are increasing in popularity mostly as a result of better eduction, people having increased free time and being a little richer. The introduction of television brings us celebrity chefs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes just like those on this recipe site. |
