The History of Recipes
It is possible to trace the history of `recipes` far back into ancient history, in truth as far back as ancient Egypt, and possibly even further than that. In practice though, these, ancient cook books were just very simple hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the most ancient recipe in existence, according to experts are a few clay tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful and blissful. Later on, in The time of the roman empire 25BC a roman called Apicius created a collection of scripts which described recipes cooked by his fellow Romans. In his works, he tells us how the roman meals were split into starters, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the cooks of Roman times were skilled in the use of many spices, including a few that will be familiar to modern cooks for example thyme, fennel and asafoetida. Later, there were two books which date from the 14th Century : a recipe book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. Despite their titles, they are nothing to do with the curry that is served today, but rather descriptions of the types of meals enjoyed by the rich and powerful of the time. Later, in the fifteenth century, people returning from the crusades brought us many new spices and herbs from Arab cooking, such as basil and rosemary. The introduction of these new culinary ideas was responsible for a surge in manuscripts on cooking, some of which still exist in academic collections. During the following few hundred years, the upper classes tried to offer the most exotic meals, and as a consequence, cooks and their collection of recipes became highly prized. However, it was during the 1800s that cooking and recipe publications became really popular. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, spent years to collating, testing, and publishing recipes common in their social group. By the time we get to the 1900s, cookery books are starting to become popular mostly due to more people being able to read, people having more free time and disposable income. The arrival of television gave us celebrity TV chefs and the recipe books that accompanied them. And that brings us to the present day and the invention of computers and the internet, allowing everybody to access massive numbers of recipes like the ones you can find on this recipe site. |
