The History of Recipes
We are able to track the history of written recipes way back into the far past, at least as far into history as early Egypt, and quite possibly further than that. However, these, old records were just very simple hieroglyphic or cunieform instructions for meal preparation.
The truth of the matter is, the oldest recipe discovered so far, according to historians are some ancient tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `blissful`. As we move into The time of the romans around 25BC a man called Apicius created some scripts detailing recipes cooked by the Romans. In his works, he recounts how the meals of wealthy Romans were split into starters, entrees and afters, a style of dining still practiced today. Additionally, he recounts how the ancient Romans used many aromatic flavours, including a few that will be familiar to modern cooks such as basil, fennel and parsley. During the next few centuries, the upper-class families of Europe competed to offer the most extravagent meals, and because of this the best chefs and their recipe collections were greatly in demand. Nevertheless, it was during the 1800s that formal cookery and recipe collections became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to collating, trying out, and publishing recipes for their fellow cooks to enjoy. The revolution that is television brings us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, permitting everyone to access thousands of recipes like the ones you can find on sites such as the one you are reading now. |
