The History of Recipes
It is quite possible to follow the history of written cooking instructions way back into the far past, at least as far back into recorded history as the Egyptians, and potentially, even further back. Having said that, sadly, these early cook books were just very simple hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the oldest recipe discovered, according to experts in ancient history are a few tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `blissful`. As we move into Roman times around 25BC a man called Apicius created some scripts describing recipes prepared by the Romans. In his publication, Apicius recounts how the meals of wealthy Romans were divided into appetizers, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the Roman chefs made use of a good variety of aromatic flavours, including some familiar names like basil, fennel and asafoetida. During the following few centuries, the upper-class families of Europe competed with each other to offer the best banquets, and consequentially the best chefs and their recipes could command a high salary. Nevertheless, it was during the nineteenth century that fine cookery and cookery books became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, trying out, and writing down recipes to help cooks of their time. By the advent of the 1900s, cooking books are in great demand, due to better eduction, people having increased spare time and a general increase in wealth. The revolution that is television brings us TV cookery programs and the spin-off recipe books. And that brings us to the present day and the invention of computers and the internet, allowing us all to search through massive numbers of recipes such as those found on our site. |
