The History of Recipes
Transcribed cooking instructions as a concept can be found back into distant history, certainly as far as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that is, in the main part, these old cook books were just primitive hieroglyphic instructions for preparing food.
Progressing into The time of the roman empire around 25BC a man called Apicius compiled some documents detailing recipes prepared by wealthy Romans. In his works, he describes how the meals were separated into starters, main course and desserts, a style of dining still practiced today. He also recounts how the cooks of Roman times used a wide range of aromatic flavours, including some familiar names like thyme, mint and parsley. In the 15th century, knights returning from the crusades brought back a variety of foods and spices from Arab cooking, including spices like basil and coriander. The introduction of these new culinary ideas created an outbreak in manuscripts on food, many of which are now in academic collections. By the arrival of the twentieth century, cooking publications were highly popular as a result of more people being able to read, people having increased spare time and disposable income. |
