The History of Recipes
We can read the history of meal recipes far back into the distant past, in fact as far as early Egypt, and maybe even further. Interesting though that is, in the main part, these old cookbooks were just basic pictorial instructions for food preparation.
In fact, the most ancient recipe discovered so far, according to experts is a series of stone tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful. Later on, in Roman times around 25BC a roman called Apicius created a few documents showing how to cook the recipes prepared by wealthy roman citizens. In his works, he describes how the meals were separated into appetizers, main meal and afters, something that is very familiar to us today. Aspicius informs us how the chefs of Roman times made use of a wide range of aromatic flavours, including many that are still in use today such as bay, fennel and dill. Later on, there were a couple of books which appeared in the 1300s ; a recipe book called `Forme of Cury`, and another named `Curye on Inglish`. The titles are somewhat misleading tho`, these two books have no connection with the spicy food that appears on menues today, but instead accounts of the types of food prepared by the cooks of the rich people of the time. Later on in the 1400s, people returning from the crusades brought us many new foods and herbs from middle-east cuisine, including spices such as basil and coriander. These new foods and tastes created an explosion in manuscripts on cookery, some of which are now in private libraries. For the next few years, the upper classes strove to lay on the most extravagent meals, and because of this chefs and their recipe collections became highly prized. However, it was during the 19th century that cooking and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, trying out, and recording popular recipes of the day. By the advent of the twentieth century, cookery books are starting to become popular mostly as a result of higher levels of literacy, leisure time and disposable income. The introduction of the TV gave us celebrity TV chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everybody to search through massive numbers of recipes just like those on sites such as the one you are reading now. |
