The History of Recipes

Food historians have tracked the existence of recipes far back into ancient history, certainly as far back into recorded history as the ancient Egyptians, and possibly even further. Interesting though that maybe, mostly, these ancient records were just simple hieroglyphic or cunieform recipes for food preparation.

Interestingly, the most ancient recipe discovered, according to academics is a collection of ancient tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `exhilarated, wonderful and blissful`.

Progressing into The time of the romans around 25BC a roman called Apicius created a collection of documents which described recipes prepared by wealthy Romans. In his publication, he tells us how the roman meals were separated into hors d`oeuvres, main meal and afters, a very modern way of dining. Aspicius also recounts how the Romans made use of many aromatic flavors, including a few that will be familiar to modern cooks for example bay, fennel and dill.

Moving on, there were two interesting cookery books from the fourteenth century - a cookery book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Despite their titles, these books have no connection with the spicy food that we all know today, but instead recipes for the types of meals cooked for the rich and wealthy people of the period.

Later, in the 15th century, people returning from the crusades brought us many new foods, spices and herbs from the holy lands, including spices like coriander, basil and rosemary. The introduction of these new culinary ideas caused an explosion in manuscripts on cookery, most of which are kept safe in private libraries.

During the next few hundred years, the rich and powerful families of the West tried to lay on the best banquets, and consequentially the best chefs and their recipes were much in demand. However, it wasn`t until the 19th century that cooking and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, trying out, and publishing recipes common in their social group.

By the advent of the 1900s, cookery books are increasing in popularity due to better eduction, people having increased leisure time and having more disposable income.

Like it or not, the introduction of TV gave us celebrity chefs and the spin-off recipe books.

Which brings us neatly to the present day and the invention of the internet, permitting everybody to search through massive numbers of recipes like the ones you can find on sites such as this.
