The History of Recipes
Written cooking instructions as an idea can be traced way back into antiquity, certainly as far as the ancient Egyptians, and quite possibly further than that. In practice though, mostly, these ancient cookbooks were just simple pictorial, hieroglyphic or cunieform recipes for meal preparation.
In an interesting twist, the oldest recipe discovered, according to academics are some ancient tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `blissful`. As we move into The time of the roman empire around 25BC a roman called Apicius compiled a few scripts detailing recipes prepared by wealthy roman citizens. He describes how the meals were divided into hors d`oeuvre, entrees and dessert, a very modern way of dining. Additionally, he informs us how the ancient chefs were skilled in the use of a wide range of aromatic flavours, including many that are still in use today such as basil, mint and dill. Moving our culinary historical trip onwards, there were a couple of cookery books dating from the fourteenth century ; a cookery book titled `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are a little misleading though, these are nothing to do with the curry that we all know today, but rather recipes for the types of food prepared by the chefs of the nobility of that time. In the 15th century, people returning from the crusades brought us a variety of spices and herbs from the holy lands, including spices like basil and coriander. The introduction of these new tastes prompted a surge in manuscripts on food, most of which still exist in private collections. Over the next few hundred years, the rich and powerful families of Wesstern Europe competed to lay on the most exotic banquets, and consequentially the best chefs and their recipe collections were at a premium. Notwithstanding that, it wasn`t until the 1800s that formal cookery and recipe books became really popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to assembling, trying out, and recording the recipes that were being prepared for the better households. When we get to the 1900s, cookery books were highly popular mostly due to better eduction, people having increased free time and having more disposable income. |
