The History of Recipes
Historians have traced the existance of recipes way back into distant history, in fact as far back into recorded history as the early Egyptians, and potentially, even further back. Interesting though that is, sadly, these old cookbooks were just primitive hieroglyphic instructions for meal preparation.
During Roman times around 25BC a roman called Apicius assembled a few documents showing how to cook the recipes prepared by the Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into starters, main meal and dessert, something that is very familiar to us today. This early Roman chef tells us how the ancient cooks used a wide range of spices and herbs, including a few that are still present in modern kitchens such as thyme, fennel and asafoetida. Over the following few hundred years, the upper-class families of Wesstern Europe strove to lay on the best banquets, and consequentially the best chefs and their recipes were much in demand. However, it was during the 19th century that haute cuisine and recipe publications reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to assembling, testing, and recording popular recipes of the day. Like it or not, the introduction of television brings us celebrity TV chefs and the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing everyone to search through thousands of recipes just like those on this recipe site. |
