The History of Recipes
It is possible to follow the history of meal recipes far back into distant history, certainly as far as pharonic Egypt, and maybe even further. Interesting though that is, generally, these old recipes were just very simple hieroglyphic recipes for preparing meals.
During Roman times 25BC a roman called Apicius compiled a collection of documents showing how to cook the recipes enjoyed by wealthy roman citizens. In his works, he describes how the meals were separated into hors d`oeuvres, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the Romans made use of a wide range of herbs and spices, including a few you will know such as thyme, fennel and parsley. During the succeeding few centuries, the upper-class families of the West strove to serve the most exotic banquets, and as a result the best chefs and their recipes increased in prestige. However, it wasn`t until the 1800s that fine cookery and cookery books really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, verifying, and writing down recipes for their fellow cooks to enjoy. Like it or not, the introduction of television brings us TV chefs and the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes just like those on our site. |
