The History of Recipes
Historians have traced the existance of recipes way back into the distant past, at least as far back as the early Egyptians, and maybe even further. Interesting though that is, generally, these ancient recipes were just very simple pictorial recipes for preparing meals.
Fascinatingly, the oldest recipe found, according to historians are a few tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. During the time of the Roman Empire a man called Apicius assembled a number of documents detailing recipes cooked by wealthy Romans. In his works, he recounts how the roman meals were split into starters, main course and afters, a style of dining still practiced today. Aspicius tells us how the Roman cooks made use of many spices and herbs, including some that we all recognise such as thyme, fennel and parsley. In the fifteenth century, the Crusaders brought back many spices and herbs from the East, including spices such as basil and rosemary. The introduction of these new culinary ideas was responsible for a torrent in manuscripts on cookery, many of which are kept safe in private libraries. Over the following few hundred years, the powerful families of Wesstern Europe competed to serve up the most exotic banquets, and as a result chefs and their collection of recipes were greatly in demand. However, it was during the nineteenth century the formal cooking and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collating, testing, and writing down recipes for their fellow cooks to enjoy. By the arrival of the 20th century, recipe books are in great demand, mostly due to increased literacy, leisure time and having more money. Like it or not, the introduction of television brought us TV cookery programs and the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes like the ones you can find on this site. |
