The History of Recipes
It is quite feasible to trace the history of written cooking instructions back into the distant past, in truth as far back into recorded history as the Egyptians, and maybe even further. Interesting though that maybe, in the main part, these early cook books were just very basic hieroglyphic or cunieform recipes for food preparation.
Interestingly, the most ancient recipe found, according to experts in ancient history are some stone tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful. As we move into The time of the romans 25BC a man called Apicius assembled some documents which described recipes prepared by his fellow Romans. In his publication, he tells us how the roman meals were split into hors d`oeuvre, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he tells us how the Roman chefs were skilled in the use of a wide range of aromatic flavors, including a few you will know like basil, rue and asafoetida. During the next few hundred years, the powerful families of Europe tried to serve the best banquets, and as a result chefs and their recipe collections increased in prestige. Even so, it wasn`t until the 19th century that fine cookery and cookery books became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to assembling, trying out, and writing down recipes to allow everyone to enjoy them. By the time we get to the twentieth century, recipe publications were increasing in popularity due to increased literacy, leisure time and a general increase in wealth. Like it or not, the introduction of TV brought us celebrity chefs and the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing us all to access massive numbers of recipes just like those on sites such as this. |
