The History of Recipes
It is quite possible to trace the history of written cooking instructions far back into distant history, in truth as far back into history as the early Egyptians, and maybe further still. However, generally, these old records were just primitive pictorial recipes for meal preparation.
As we move into The time of the roman empire around 25BC a roman called Apicius compiled a number of documents describing recipes enjoyed by the Romans. In his scrolls, Apicius recounts how the roman meals were split into hors d`oeuvres, main meal and desserts, something we still use today. Additionally, he tells us how the Roman cooks made use of a good variety of spices and herbs, including a few that are still present in modern kitchens for example basil, rue and asafoetida. Over the next few hundred years, the rich and powerful families of Wesstern Europe competed with each other to serve the most exotic meals, and as a result the best cooks and their collection of recipes were highly sought after. Nevertheless, it wasn`t until the 19th century the formal cooking and recipe books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collecting, testing, and recording recipes of the day. The arrival of TV brings us cooking programs and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of computers and the internet, permitting us all to search through massive numbers of recipes such as those found on this recipe site. |
