The History of Recipes
We can track the history of meal recipes far back into history, certainly as far back as ancient Egypt, and possibly even further. In practice though, mostly, these old cook books were just very basic hieroglyphic instructions for food preparation.
In fact, the oldest recipe in existence, according to Professor Solomon Katz, are some tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful and exhilarated. Progressing into The time of the roman empire 25BC a roman called Apicius wrote a number of documents describing recipes enjoyed by his fellow Romans. In his scrolls, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvres, main course and dessert, something that is very familiar to us today. He also tells us how the chefs of Roman times used a wide range of herbs, including some that we all recognise for example basil, fennel and asafoetida. Later on in the 1400s, people returning from the crusades brought back many foods and herbs from Arab cooking, such as coriander, parsley, and basil. The introduction of these new tastes created an increase in manuscripts on food, some of which are now in private cookery archives. For the centuries that followed, the powerful and rich houses competed with each other to serve the most exotic meals, and as a consequence, cooks and their recipes were highly sought after. However, it wasn`t until the nineteenth century that formal cookery and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to assembling, verifying, and recording recipes common in their social group. By the time we get to the 20th century, cook books were in high demand, mostly as a result of more people being able to read, more free time and being a little richer. The introduction of the TV gave us cooking programs and the recipe books that accompanied them. And that neatly brings us to the present day and the invention of computers and the internet, allowing everybody to access thousands of recipes just like those on the site you are now reading. |
