The History of Recipes
Recipes as a concept can be found way back into the far past, at least as far back into history as pharonic Egypt, and quite possibly further than that. Interesting though that maybe, mostly, these early cook books were just very simple hieroglyphic or cunieform instructions for meal preparation.
As we move into The time of the roman empire 25BC a roman called Apicius compiled a collection of scripts detailing recipes cooked by wealthy Romans. He describes how the meals were divided into hors d`oeuvre, main course and desserts, a very modern way of dining. This early Roman chef tells us how the Roman cooks were skilled in the use of a wide range of spices, including many that are still in use today for example thyme, fennel and asafoetida. In the fifteenth century, knights returning from the crusades brought back many spices and herbs from the holy lands, including spices like rosemary and coriander. The introduction of these new tastes caused a torrent in books on cooking, most of which are now in academic collections. By the arrival of the 20th century, cookery publications are in great demand, mostly due to better eduction, people having increased leisure time and a general increase in wealth. |
