The History of Recipes
Historians have tracked the existance of recipes way back into antiquity, in truth as far into history as pharonic Egypt, and potentially, even further back. Interesting though that maybe, sadly, these old recipes were just primitive pictorial, hieroglyphic or cunieform instructions for preparing food.
Interestingly, the most ancient recipe discovered, according to experts in ancient history are a few tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful and exhilarated. As we move into The time of the romans 25BC a man called Apicius created a number of documents which described recipes enjoyed by the Romans. In his publication, he recounts how the meals of wealthy Romans were separated into starters, main course and afters, a style of dining still practiced today. He also describes how the Roman cooks used many spices, including some familiar names for example bay, mint and asafoetida. Later, in the 15th century, knights returning from the crusades brought us many new foods and spices from the holy land, including rosemary and coriander. These new culinary innovations prompted a surge in recipe books, most of which still exist in private cookery archives. Over the succeeding few hundred years, the wealthy families of Europe competed to offer the most extravagent banquests, and as a result cooks and their recipes were much in demand. Notwithstanding that, it wasn`t until the 1800s that cookery and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to assembling, trying out, and writing down recipes that were common in the better off homes of the day. When we get to the twentieth century, recipe books were in great demand, as a result of increased literacy, people having more spare time and having more disposable income. The TV revolution brought us TV cookery programs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing us all to access thousands of recipes just like those on our site. |
