The History of Recipes
We can trace the history of meal recipes back into the distant past, in truth as far back as the early Egyptians, and maybe further still. Interesting though that is, these, old records were just very simple pictorial instructions for food preparation.
In fact, the most ancient recipe discovered so far, according to experts are a few tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `wonderful`. Later on, in Roman times around 25BC a man called Apicius assembled some documents which described recipes cooked by the Romans. In his works, he describes how the roman meals were separated into hors d`oeuvre, main course and dessert, a style of dining still practiced today. Aspicius also recounts how the ancient cooks made use of a wide range of herbs and spices, including a few you will know for example thyme, mint and dill. Later on, there are two books dating from the 14th Century : a recipe book published under the title `Forme of Cury`, and another, similary titled `Curye on Inglish`. Despite their titles, these are unconnected to the indian food that is popular today, but instead descriptions of the types of meals prepared by the chefs of the rich and wealthy people of the time. Later on in the 1400s, the Crusaders brought back many new spices and herbs from Arab cuisine, including parsley, basil and rosemary. The introduction of these new culinary ideas prompted a torrent in publications on food, many of which are kept safe in academic collections. For the next few years, the powerful families of Europe tried to offer the most exotic banquets, and because of this the best cooks and their collection of recipes became highly prized. However, it wasn`t until the nineteenth century that fine cookery and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated the best years of their lives to assembling, verifying, and publishing recipes common in their social group. By the advent of the twentieth century, recipe publications were starting to become popular mostly due to higher levels of literacy, people having more spare time and disposable income. The introduction of the TV brought us celebrity TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the internet revolution, allowing us all to search through massive numbers of recipes just like those on our site. |
