3 tbsp unsalted butter
1 1/2 cup barley
1 medium bunch scallions (white &
1 green portions), thin slice
10 oil-packed sun-dried tomato
1 halves, sliced 1/4 thick
1 1/2 tsp salt
1/2 tsp freshly ground pepper
4 1/2 cup boiling water
Directions
Melt the butter in a medium saucepan. Add the barley and cook
over high heat for 2 minutes, stirring frequently. Add the scallions
and cook for 1 minute, stirring constantly. Add the sun-dried
tomatoes, salt and pepper. Stir in the boiling water and return to a
boil. Reduce the heat to low, cover and cook, stirring occasionally,
until the barley is chewy, 35 to 40 minutes.
Serve with the roast veal and the sauteed broccoli rabe. Source:

The History of Recipes
Written recipes as an idea can be traced far back into the distant past, in fact as far back into history as the Egypt of the Pharoahs, and quite possibly further than that. Later on, in The time of the romans 25BC a roman called Apicius created a few scripts showing how to cook the recipes enjoyed by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were split into starters, entrees and desserts, something we still use today. This early Roman chef recounts how the ancient chefs were skilled in the use of many different herbs, including many that are still in use today such as basil, mint and dill. Later on, in the 15th century, people returning from the crusades brought us a variety of foods and spices from the Middle-East, including spices like rosemary and coriander. These new culinary innovations was responsible for a surge in books on cooking, most of which are now in academic collections. When we get to the 20th century, cookbooks were greatly in demand as a result of increased literacy, people having increased free time and having more money to spend. |
