The History of Recipes

It is quite possible to follow the history of written cooking instructions back into distant history, at least as far back into recorded history as ancient Egypt, and maybe further still. Having said that, mostly, these early recipes were just simple pictorial, hieroglyphic or cunieform recipes for preparing food.

The truth of the matter is, the oldest recipe found, according to experts is a collection of tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful and exhilarated.

As we move into Roman times around 25BC a Roman scholar, called Apicius, assembled some scrolls describing recipes prepared by his fellow Romans. In his scrolls, he tells us how the roman meals were split into starters, main meal and afters, something that is very familiar to us today. Aspicius tells us how the early Romans made use of many spices and herbs, including a few that are still present in modern kitchens for example thyme, mint and asafoetida.

Later, in the 15th century, knights returning from the crusades brought us many spices and herbs from the Middle-East, including basil and coriander. The introduction of these new foods and spices was responsible for an explosion in manuscripts on cookery, some of which still exist in private libraries.

During the following few centuries, the wealthy families of Europe competed with each other to serve up the most exotic meals, and as a result the best cooks and their recipe collections became highly prized. Notwithstanding that, it was during the 19th century that cooking and recipe publications really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to collating, testing, and recording the recipes of their peers.

When we get to the 1900s, cooking publications are in great demand, mostly as a result of more people being able to read, people having increased free time and having more money to spend.

The arrival of TV brings us TV cookery programs and the demand for the accompanying recipe books.

Which brings us neatly to the present day and the internet revolution, permitting everyone to access thousands of recipes just like those on sites such as this.
