2 1/2 cup all purpose flour
1 tbsp baking powder
1/2 tsp salt
3/4 cup shortening
1 cup milk or buttermilk

Nathalie Dupree's Matter of Taste Cookbook and they are really good
and easy too! Preheat oven to 450 to 500 degrees. Sift 2 cups of
flour with the baking powder and salt in a bowl. Cut in the
shortening with a pastry blender or fork, or work in with your
fingers. Add the milk to make a soft dough, mixing just until the
dough holds together. Flour your hands. Pull off a piece of dough the
size of a biscuit and dip the wet edge into extra flour. Then roll or
pat into a biscuit shape. Place the biscuits, slightly touching, on a
lightly greased baking sheet. Bake until golden brown 8 to 10 min.

The History of Recipes
We can read the history of meal recipes far back into distant history, in fact as far as the Egypt of the Pharoahs, and possibly even further. Having said that, mostly, these early recipes were just very basic pictorial recipes for food preparation.
Later on, in Roman times around 25BC a roman called Apicius wrote a collection of documents showing how to cook the recipes prepared by the Romans. In his scrolls, he tells us how the roman meals were split into appetizers, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef informs us how the Romans used many herbs and spices, including a few you will know for example bay, mint and dill. Later on in the 1400s, people returning from the crusades brought back many new foods and spices from middle-east cuisine, including spices such as coriander, parsley, basil and rosemary. The introduction of these new foods and spices led to a surge in recipe books, the majority of which still exist in private cookery archives. The introduction of the TV gave us celebrity TV chefs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, permitting everybody to access thousands of recipes like the ones you can find on our site. |
