The History of Recipes
It is possible to read the history of written recipes back into distant history, in truth as far back into history as ancient Egypt, and potentially, even further back. Interesting though that is, sadly, these old cookbooks were just simple hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the most ancient recipe found, according to experts in ancient history is a collection of stone tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `exhilarated, wonderful and blissful`. Later on, in The time of the roman empire 25BC a man called Apicius compiled some documents which described recipes enjoyed by wealthy Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into starters, entrees and dessert, a very modern way of dining. He also tells us how the ancient chefs were skilled in the use of many different herbs and spices, including many that are still in use today like basil, mint and parsley. Later, in the fifteenth century, knights returning from the crusades brought us many new spices and herbs from the East, including spices like basil and coriander. These new foods and tastes was responsible for a surge in recipe publications, the majority of which are kept safe in private collections. During the following few hundred years, the wealthy families of Europe tried to serve the most exotic meals, and as a result the best chefs and their recipe collections increased in prestige. However, it was during the 1800s that haute cuisine and cookery books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, verifying, and recording recipes to allow everyone to enjoy them. By the time we get to the 1900s, recipe books were increasing in popularity mostly due to increased literacy, people having increased leisure time and a general increase in wealth. |
