Directions
3 TB unsalted butter
1 c chopped onion
1 potato -- peeled and diced
2 c water or chicken stock
1 1/2 c steamed vegetables, i.e.
: carrots, broccoli --
: spinach, or peas
: Salt and pepper
1/2 c heavy cream
In a large saucepan, melt butter over medium heat. Add the chopped
onion and cook until tender without browning. Stir in diced potato
and liquid. Bring to a boil and simmer until potato is tender. Stir
in your steamed vegetable of choice and return to a simmer. Puree the
soup in batches in a blender and return to saucepan. Leave 1 cup of
vegetables not pureed if a chunkier soup is preferred. Season soup
with salt and pepper and finish with heavy cream. Serve warm with
french bread and a salad.

The History of Recipes
We can read the history of written recipes back into ancient history, certainly as far into history as ancient Egypt, and potentially, even further back. However, mostly, these ancient cook books were just primitive hieroglyphic or cunieform instructions for preparing meals.
In fact, the oldest recipe found, according to academics are a few stone tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful. Later on, we have a couple of interesting recipe books which appeared in the fourteenth century - a cookery book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Amusingly, they are not about the indian curry that is familiar to us all today, but instead descriptions of the types of meals prepared by the cooks of the nobility of the time. For the next few years, the rich families of the West competed with each other to lay on the most exotic meals, and as a result the best chefs and their recipes were at a premium. Even so, it was during the nineteenth century that fine cooking and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, testing, and recording recipes of the day. The introduction of the TV brings us cooking programs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of computers and the internet, allowing us all to search through massive numbers of recipes such as those found on this web site. |
