The History of Recipes
Written cooking instructions as a concept can be observed far back into distant history, at least as far back into history as the Egypt of the Pharoahs, and maybe further still. Interesting though that is, in the main part, these early recipes were just simple hieroglyphic or cunieform instructions for food preparation.
As we move into The time of the roman empire around 25BC a roman called Apicius wrote a collection of documents describing recipes prepared by the Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also tells us how the Roman chefs made use of a wide range of spices, including a few that will be familiar to modern chefs such as basil, rue and parsley. In the 15th century, people returning from the crusades brought back many foods and spices from the holy land, including coriander, parsley, and rosemary. These new foods and tastes caused an increase in manuscripts on cookery, some of which are kept safe in academic collections. When we get to the 1900s, cookbooks are in great demand, as a result of better eduction, people having more leisure time and disposable income. |
