The History of Recipes
It is quite feasible to trace the history of written cooking instructions way back into antiquity, in fact as far back as the ancient Egyptians, and maybe even further. However, in the main part, these old recipes were just basic pictorial, hieroglyphic or cunieform instructions for preparing food.
Interestingly, the most ancient recipe discovered, according to Professor Solomon Katz, is a collection of tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated and blissful. As we move into The time of the romans 25BC a roman called Apicius compiled a number of documents showing how to cook the recipes cooked by his fellow Romans. In his works, he describes how the meals were split into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the Roman chefs used many herbs and spices, including many that are still in use today for example basil, fennel and dill. Closer to modern times, there were some interesting books dating from the 1300s : a recipe book entitled `Forme of Cury`, and another called `Curye on Inglish`. Surprisingly, these two books are nothing to do with the curry that is served today, but rather recipes for the types of food cooked for the upper classes of that time. Later, in the 15th century, people returning from the crusades brought us a variety of spices and herbs from the holy lands, including spices such as basil and rosemary. These new herbs and spices created a surge in manuscripts on food, some of which still exist in private collections. By the time we get to the twentieth century, cookery books were greatly in demand mostly due to better eduction, increased leisure time and being a little richer. Like it or not, the introduction of TV brings us TV chefs and the accompanying recipe books. Which brings us neatly up to date and the internet revolution, allowing us all to access thousands of recipes like the ones you can find on our web site. |
