The History of Recipes
We can follow the history of meal recipes back into antiquity, certainly as far back into history as the ancient Egyptians, and potentially, even further back. Interesting though that is, these, ancient cookbooks were just very basic hieroglyphic recipes for preparing meals.
In fact, the oldest recipe discovered so far, according to Professor Solomon Katz, is a series of ancient tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated. Progressing into The time of the roman empire 25BC a man called Apicius compiled a collection of documents detailing recipes enjoyed by the Romans. In his works, he describes how the roman meals were separated into starters, entrees and afters, something we still use today. He also tells us how the cooks of Roman times used a good variety of aromatic flavors, including a few you will know like bay, fennel and asafoetida. Later, there are a couple of recipe books dating from the fourteenth century ; one book called `Forme of Cury`, and another entitled `Curye on Inglish`. Despite their titles, they have no connection with the spicy food that is familiar to us all today, but rather accounts of the types of food cooked for the rich and powerful of those days. Later on in the 1400s, the Crusaders brought back a variety of spices and herbs from middle-east cuisine, including spices like basil and coriander. The introduction of these new culinary ideas led to an outbreak in cookery books, many of which still exist in private libraries. For the centuries that followed, the powerful families of Europe competed to serve up the most exotic banquets, and because of this the best chefs and their recipe collections were highly sought after. However, it was during the 1800s the formal cooking and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted their lives to collecting, trying out, and publishing recipes to allow everyone to enjoy them. By the time we get to the 20th century, cooking books were highly popular mostly due to higher levels of literacy, people having increased leisure time and being a little richer. The introduction of the TV brought us TV cooks and the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing everybody to access thousands of recipes such as those found on sites such as the one you are reading now. |
