Basil Mashed Potatoes Recipe

2 1/2 lb baking potatoes, -- peeled
: and cubed
3/4 c heavy cream
1/2 stick unsalted butter
2 TB lemon juice
1/2 c chopped basil leaves
1 TB grated ginger
1 TB minced garlic
: Salt

In a large saucepan of salted water bring potatoes to a boil. Simmer
about 20 minutes or until tender. Drain. Pass potatoes through a
ricer into a mixing bowl. Meanwhile, in a small saucepan combine
cream and butter. Bring to a boil and keep hot until potatoes are
cooked. With a mixer or electric beater whip potatoes on slow speed,
slowly drizzling in cream mixture. Do not overmix. Fold in lemon
juice, basil, ginger and garlic. Season with sal

Surprisingly, these are nothing to do with the spicy food that appears on menues today, but rather descriptions of the types of meals enjoyed by the wealthy.

In the 15th century, knights returning from the crusades brought us many new foods and spices from the holy lands, such as rosemary and coriander. These new herbs and spices prompted an outbreak in books on cooking, some of which are now in academic collections.
