1 cl garlic
1/2 tsp dijon-style mustard
1/4 cup basil or tarragon vinegar
2/3 cup basil olive oil or olive oil
1 cup loosely packed fresh basil,
1 rinsed and spun dry
Directions
In a blender blend the garlic, the mustard, the vinegar, and salt to
taste; add the oil and basil, and blend the mixture until it is
emulsified. Serve the vinaigrette over sliced tomatoes or with
grilled scallops or other seafood. Makes about 1 cup.

The History of Recipes
It is possible to track the history of `recipes` way back into ancient history, certainly as far back as early Egypt, and maybe further still. In practice though, these, ancient cookbooks were just basic hieroglyphic instructions for preparing food.
Later on, in The time of the roman empire 25BC a man called Apicius compiled some scripts describing recipes cooked by wealthy roman citizens. In his works, he tells us how the roman meals were split into starters, main meal and dessert, a style of dining still practiced today. Aspicius also tells us how the ancient Romans used many herbs and spices, including a few that are still present in modern kitchens such as bay, fennel and asafoetida. For the decades that followed, the rich families of Europe competed with each other to lay on the most extravagent meals, and because of this the best cooks and their collection of recipes increased in prestige. However, it was during the 19th century that haute cuisine and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to collating, verifying, and recording popular recipes of the day. The arrival of television brought us cooking programs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everyone to access thousands of recipes like the ones you can find on our web site. |
