The History of Recipes
It is quite feasible to follow the history of transcribed cooking instructions back into history, at least as far back as the Egyptians, and possibly even further than that. Interesting though that is, these, old cookbooks were just very basic hieroglyphic recipes for meal preparation.
Interestingly, the oldest recipe found, according to historians are a few tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated and blissful. As we move into The time of the romans 25BC a man called Apicius compiled a few documents detailing recipes enjoyed by his fellow Romans. In his works, he recounts how the meals were split into hors d`oeuvre, main meal and afters, a style of dining still practiced today. Aspicius recounts how the cooks of Roman times were skilled in the use of many spices, including a few you will know like thyme, mint and asafoetida. Moving on, there are two recipe books from the 14th Century - one book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Despite their titles, these are unconnected to the curry that is popular today, but instead descriptions of the types of meals prepared for the upper classes of that period. Later, in the 15th century, the Crusaders brought back a variety of foods, spices and herbs from the Middle-East, such as coriander, basil and rosemary. The introduction of these new culinary ideas prompted an eruption in manuscripts on food, many of which are kept safe in private collections. By the time we get to the twentieth century, cooking books were highly popular due to increased literacy, people having more free time and having more money. |
