2 cup all purp flour
1 tbsp salt
1 1/2 tsp garlic powder
1 tsp baking powder
1 1/2 cup beer
1 oil for deep frying

Combine flour, salt, garlic powder, and baking powder in med bowl.
Add beer and whisk until smooth. Cover and chill 30 mins. Whisk
again, let stand in refrigerator until ready to use. Batter can be
prepared 1 day ahead if desired. Heat oil to 375 F. Holding stem, dip
each mushroom into batter, covering cap completely. Fry in batches
until golden brown. Allow oil to return to 375 F before adding next

The History of Recipes
It is quite possible to trace the history of written cooking instructions way back into ancient history, in truth as far as the ancient Egyptians, and maybe further still. However, sadly, these old recipes were just very basic pictorial recipes for meal preparation.
The truth of the matter is, the oldest recipe found, according to Professor Solomon Katz, are a few stone tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful and blissful. Later on, in The time of the roman empire around 25BC a roman called Apicius wrote a number of documents describing recipes cooked by wealthy Romans. In his publication, he recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main course and dessert, something we still use today. This early Roman chef describes how the Roman chefs used a wide range of spices and herbs, including some that we all recognise such as basil, rue and dill. During the following few hundred years, the powerful and rich houses competed with each other to serve the most extravagent meals, and as a result the best cooks and their recipes were highly sought after. Notwithstanding that, it wasn`t until the nineteenth century that fine cookery and recipe books rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to assembling, testing, and writing down the recipes that were being prepared for the better households. The arrival of television gave us cooking programs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing us all to search through thousands of recipes just like those on this site. |
