The History of Recipes
Transcribed cooking instructions as a concept can be traced far back into antiquity, in truth as far into history as the Egyptians, and maybe even further. In practice though, these, early cook books were just primitive hieroglyphic or cunieform instructions for food preparation.
During the time of the Romans a roman called Apicius wrote some scripts which described recipes enjoyed by his fellow Romans. In his publication, he tells us how the meals of wealthy Romans were split into hors d`oeuvre, main course and desserts, something we still use today. Aspicius also informs us how the chefs of Roman times made use of many aromatic flavours, including a few that will be familiar to modern chefs like basil, mint and dill. Over the next few hundred years, the powerful and wealthy houses tried to serve up the best banquets, and as a consequence, chefs and their recipes could command a high salary. However, it wasn`t until the nineteenth century that fine cooking and recipe books reached a high level of popularity. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, trying out, and publishing recipes to allow everyone to enjoy them. When we get to the 20th century, cook books are increasing in popularity due to more people being able to read, leisure time and having more money to spend. |
