The History of Recipes
Academics have tracked the existance of recipes far back into history, in truth as far back as the ancient Egyptians, and maybe even further. Having said that, in the main part, these old cook books were just simple hieroglyphic instructions for preparing meals.
Interestingly, the most ancient recipe discovered so far, according to food historians is a series of tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful. During the time of the Roman Empire a roman called Apicius created a collection of scripts which described recipes enjoyed by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were divided into starters, main course and desserts, something we still use today. He also recounts how the ancient chefs used a good variety of herbs, including a few that will be familiar to modern cooks like thyme, mint and asafoetida. In the fifteenth century, people returning from the crusades brought us many new foods and spices from the East, such as parsley and basil. These new herbs and spices was responsible for a torrent in cookery books, most of which are now in private cookery archives. Over the following few hundred years, the upper classes tried to serve the most extravagent meals, and as a result cooks and their recipe collections were highly sought after. Even so, it was during the nineteenth century the formal cooking and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collecting, verifying, and publishing recipes that were common in the better off homes of the day. Like it or not, the introduction of television gave us celebrity chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, permitting us all to search through thousands of recipes such as those found on the site you are now reading. |
