The History of Recipes
We are able to read the history of written recipes way back into distant history, certainly as far into history as the Egyptians, and maybe further still. Interesting though that is, generally, these old records were just basic pictorial recipes for preparing food.
As we move into The time of the romans around 25BC a roman called Apicius assembled a few documents describing recipes cooked by the Romans. In his scrolls, he tells us how the meals of wealthy Romans were split into starters, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the ancient cooks used a wide range of aromatic flavours, including a few that will be familiar to modern chefs for example thyme, mint and dill. Later, in the fifteenth century, knights returning from the crusades brought back many foods, spices and herbs from Arab countries, including coriander, parsley, basil and rosemary. The introduction of these new culinary ideas was responsible for an eruption in publications on food, some of which are kept safe in private collections. By the advent of the 20th century, cookery publications were in high demand, due to more people being able to read, people having more leisure time and disposable income. |
