The History of Recipes
Transcribed cooking instructions as a concept can be found back into history, at least as far into history as the ancient Egyptians, and possibly even further than that. Interesting though that is, these, old recipes were just primitive pictorial recipes for food preparation.
Fascinatingly, the oldest recipe in existence, according to experts is a series of stone tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful and blissful. Progressing into The time of the roman empire around 25BC a man called Apicius compiled a few documents detailing recipes cooked by his fellow Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into starters, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also describes how the early Romans were skilled in the use of many aromatic flavors, including a few that are still present in modern kitchens for example thyme, mint and asafoetida. As our culinary historical trip moves to more modern times there are some recipe books which date from the 14th Century - a recipe book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. Despite their titles, they have no connection with the indian curry that is served today, but rather recipes for the types of food served to the nobility of that period. In the 15th century, the Crusaders brought back many spices and herbs from Arab countries, such as coriander, basil and rosemary. The introduction of these new culinary ideas was responsible for an outbreak in books on cooking, the majority of which still exist in private libraries. The introduction of television brought us TV cookery programs and the accompanying recipe books. Which pretty much brings us to the present day and the internet revolution, permitting everybody to access thousands of recipes like the ones you can find on sites such as this. |
