The History of Recipes
It is quite feasible to follow the history of recipes way back into history, in fact as far back into recorded history as ancient Egypt, and maybe further still. Having said that, these, old cookbooks were just very simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the most ancient recipe discovered, according to Professor Solomon Katz, is a series of ancient tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated and blissful. Progressing into The time of the romans around 25BC a roman called Apicius compiled a collection of scripts showing how to cook the recipes prepared by his fellow Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvres, main course and dessert, something that is very familiar to us today. He also informs us how the cooks of Roman times used a wide range of aromatic flavors, including a few that are still present in modern kitchens such as thyme, rue and dill. Later, in the 15th century, knights returning from the crusades brought back many new spices and herbs from the holy lands, including basil and rosemary. These new culinary innovations caused a torrent in recipe publications, some of which are kept safe in academic collections. During the next few hundred years, the rich and powerful families of Europe strove to serve the most exotic meals, and consequentially the best cooks and their collection of recipes were highly sought after. Notwithstanding that, it wasn`t until the nineteenth century that haute cuisine and recipe publications became popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted their lives to assembling, trying out, and recording recipes for their fellow cooks to enjoy. By the time we get to the twentieth century, cookery publications are starting to become popular mostly due to better eduction, people having more leisure time and being a little richer. |
