The History of Recipes
We are able to follow the history of written recipes far back into the far past, in truth as far back into history as the Egyptians, and maybe even further. Having said that, generally, these early recipes were just basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
The truth of the matter is, the most ancient recipe discovered, according to experts is a series of ancient tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful and exhilarated. Later on, in The time of the roman empire around 25BC a roman called Apicius created a number of documents which described recipes enjoyed by wealthy roman citizens. In his works, Apicius recounts how the roman meals were divided into hors d`oeuvres, main course and dessert, something we still use today. Aspicius also tells us how the Roman chefs were skilled in the use of a good variety of spices and herbs, including a few that will be familiar to modern cooks like bay, fennel and asafoetida. During the following few hundred years, the families of Europe tried to serve the best banquets, and consequentially chefs and their recipe collections became highly prized. Nevertheless, it wasn`t until the nineteenth century that formal cookery and recipe books became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to collecting, testing, and publishing recipes that were common in the better off homes of the day. By the time we get to the 1900s, cookbooks were increasing in popularity due to better eduction, leisure time and disposable income. The arrival of television gave us celebrity chefs and the spin-off recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing us all to access massive numbers of recipes such as those found on this site. |
