The History of Recipes
Written recipes as an idea can be observed far back into the far past, at least as far back into history as the early Egyptians, and maybe further still. Interesting though that maybe, generally, these early records were just very basic hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the oldest recipe found, according to experts are some clay tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful. Much later, in Roman times a roman called Apicius created a number of documents describing recipes prepared by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into starters, main course and afters, something that is very familiar to us today. Aspicius describes how the early Romans were skilled in the use of many different herbs and spices, including a few you will know for example bay, fennel and dill. Continuing our culinary historical journey, we find some recipe books dating from the 14th Century : a recipe book titled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Despite their titles, they are not about the curry that appears on menues today, but instead descriptions of the types of food cooked for the rich and powerful of that period. Later on, in the 15th century, people returning from the crusades brought us many foods, spices and herbs from the Middle-East, including basil and rosemary. The introduction of these new culinary ideas led to a torrent in manuscripts on cooking, some of which are kept safe in private collections. When we get to the twentieth century, cookbooks were in great demand, due to increased literacy, more leisure time and disposable income. |
