The History of Recipes
Transcribed cooking instructions as a concept can be tracked far back into antiquity, in fact as far back into recorded history as the ancient Egyptians, and maybe even further. However, mostly, these old cookbooks were just basic pictorial recipes for food preparation.
In an interesting twist, the most ancient recipe found, according to Professor Solomon Katz, is a collection of clay tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. Later on, in The time of the romans 25BC a roman called Apicius wrote some documents showing how to cook the recipes enjoyed by wealthy Romans. In his scrolls, Apicius describes how the roman meals were split into starters, main meal and dessert, a very modern way of dining. Additionally, he describes how the Roman cooks made use of a wide range of herbs and spices, including a few that are still present in modern kitchens for example bay, rue and parsley. Later on, in the 15th century, people returning from the crusades brought back a variety of spices and herbs from the East, including spices such as parsley, basil and rosemary. These new herbs and spices was responsible for an eruption in recipe manuscripts, most of which are now in private libraries. When we get to the 20th century, cook books are greatly in demand mostly due to increased literacy, increased leisure time and being a little richer. The TV revolution gave us TV chefs and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of computers and the internet, permitting us all to search through massive numbers of recipes just like those on our site. |
