The History of Recipes
Written recipes as a concept can be tracked back into history, at least as far into history as the Egyptians, and possibly even further. Interesting though that maybe, sadly, these ancient recipes were just primitive hieroglyphic instructions for preparing food.
Fascinatingly, the oldest recipe in existence, according to food historians are a few stone tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. Progressing into The time of the roman empire around 25BC a man called Apicius compiled a few scripts detailing recipes cooked by the Romans. In his works, Apicius recounts how the roman meals were separated into appetizers, main meal and desserts, something we still use today. This early Roman chef recounts how the Romans were skilled in the use of a good variety of aromatic flavors, including a few you will know such as basil, fennel and asafoetida. Later, in the 15th century, the Crusaders brought back a variety of foods, spices and herbs from Arab cuisine, including spices like basil and rosemary. These new spices and herbs created an explosion in recipe books, many of which still exist in private collections. By the time we get to the twentieth century, recipe books are highly popular due to higher levels of literacy, people having increased spare time and being a little richer. Like it or not, the introduction of TV brought us TV cooks and the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting everybody to access massive numbers of recipes just like those on this site. |
