The History of Recipes
It is possible to follow the history of meal recipes back into history, in fact as far back into recorded history as the Egypt of the Pharoahs, and possibly even further. However, in the main part, these old cook books were just basic pictorial, hieroglyphic or cunieform recipes for preparing food.
Progressing into The time of the romans around 25BC a roman called Apicius assembled a number of documents showing how to cook the recipes enjoyed by wealthy roman citizens. In his works, Apicius recounts how the meals were separated into appetizers, main meal and dessert, a very modern way of dining. Aspicius also tells us how the chefs of Roman times made use of a good variety of herbs and spices, including a few that will be familiar to modern chefs like basil, mint and asafoetida. Later, in the 15th century, knights returning from the crusades brought back a variety of spices and herbs from middle-east cuisine, including spices like parsley and basil. These new spices and herbs led to an explosion in manuscripts on food, the majority of which are kept safe in academic collections. By the advent of the 1900s, cookery publications were greatly in demand mostly due to higher levels of literacy, people having increased free time and having more money. |
