The History of Recipes
Food historians have traced the existance of recipes far back into antiquity, in truth as far back into recorded history as ancient Egypt, and maybe further still. Interesting though that maybe, mostly, these early records were just primitive pictorial instructions for food preparation.
Later on, in Roman times 25BC a roman called Apicius wrote some documents which described recipes enjoyed by wealthy Romans. In his scrolls, he recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main course and desserts, something we still use today. Aspicius also informs us how the ancient Romans made use of a wide range of spices, including some that we all recognise for example thyme, mint and parsley. During the succeeding few hundred years, the powerful and wealthy houses tried to serve the most exotic meals, and as a consequence, the best cooks and their collection of recipes were highly sought after. Even so, it wasn`t until the nineteenth century the formal cooking and recipe books rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to assembling, testing, and writing down the recipes of their peers. By the arrival of the 1900s, cook books are increasing in popularity mostly due to more people being able to read, people having more spare time and being a little richer. |
