The History of Recipes
Written recipes as an idea can be tracked way back into the distant past, certainly as far back as ancient Egypt, and potentially, even further back. In practice though, generally, these early recipes were just simple hieroglyphic recipes for food preparation.
In an interesting twist, the oldest recipe found, according to historians are a few tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful. Progressing into Roman times 25BC a man called Apicius assembled a few documents describing recipes enjoyed by his fellow Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvre, main course and desserts, something we still use today. Aspicius also tells us how the early Romans were skilled in the use of many aromatic flavors, including a few that are still present in modern kitchens for example thyme, mint and asafoetida. Over the succeeding few centuries, the powerful families of the West competed with each other to serve the most exotic meals, and as a result the best chefs and their recipe collections were greatly in demand. Notwithstanding that, it wasn`t until the nineteenth century that fine cooking and recipe books really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to collecting, trying out, and recording recipes of the day. When we get to the twentieth century, recipe books are in high demand, mostly due to increased literacy, people having increased leisure time and having more money. The TV revolution brought us cooking programs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to access massive numbers of recipes like the ones you can find on sites such as this. |
